In true Spanish spirit our program begins and ends with a fiesta! Troubadors serenade us at our Welcome Gala in a Don-Quixote style tavern and a folk dance troupe entertains us at our Farewell Fete.     Whenever possible our program takes advantage of the many pueblo fiestas celebrated in Castilla. We encourage our participants to join the festivities and to immerse themselves in this uniquely Spanish way of having fun.     Everyday life in Spain is a Fiesta! There's always something new and exciting happening just around the next corner and even the parade of humanity filling the Plaza Mayor late at night seems a fiesta to foreign eyes!     When we have completed our course in the cuisine of Castilla, it's time for our Graduation ceremony, complete with diplomas and souvenir recipe books!
